Oven Temperature Conversion: Fan, Gas Mark & Air Fryer

Put in the temperature your recipe gives — in °F or °C — and see what to set on a conventional oven, a fan oven, an air fryer or a gas cooker. Below the tool you will find a printable oven temperature chart and plain answers to the questions that trip up home bakers.

Calculated values are shown first, rounded to at most 2 decimal places. Approximate dial settings are rounded independently to the nearest 10 °C or 25 °F; follow your recipe and appliance instructions.

Oven temperature conversion chart

The chart lists approximate oven-dial settings, rounded to convenient numbers: Celsius to the nearest 10 degrees and Fahrenheit to the nearest 25. These are not exact mathematical equivalents: 140 °C is listed next to 275 °F, but converts to exactly 284 °F. Follow the recipe and your appliance instructions.

Quick answers

And the most common Celsius settings, converted exactly:

Fan oven vs conventional oven

A conventional (sometimes called “static” or “top and bottom heat”) oven warms the air with elements and relies on natural movement of hot air. A fan oven adds a fan at the back that blows hot air around the cavity. Moving air transfers heat to food faster, so the same dial setting cooks more quickly and browns more.

This converter uses an approximate 20 °C reduction from conventional to fan settings as a starting point. A 20 °C temperature difference equals 36 °F. Recipes may already list both settings, for example “180 °C / 160 °C fan”. Follow the recipe and your appliance manual, especially if your oven adjusts the temperature automatically.

Convection ovens

“Convection” is the North American name for a fan oven. Whirlpool recommends a 25 °F reduction as a rule of thumb for fan convection. That is about 14 °C, a different adjustment from this tool’s 20 °C reduction, rather than a rounded conversion of it.

Air fryer conversion

An air fryer is essentially a small, powerful fan oven. A good starting point for converting an oven recipe is to set the air fryer about 20 °C (roughly 36 °F) lower and reduce the cooking time by around 20%. Shake or turn food halfway through, and check a few minutes before the end — smaller baskets and thinner foods cook faster.

350 °F / 30 min156.67 °C (314 °F)about 24 min
400 °F / 20 min184.44 °C (364 °F)about 16 min
425 °F / 25 min198.33 °C (389 °F)about 20 min

Treat these settings as starting points. Frozen foods, large portions and baked goods can behave differently; follow the recipe and your appliance instructions.

Gas mark chart and UK oven temperatures

Gas marks are a British scale for gas cookers, running from ¼ (very cool) to 9 (very hot). From Gas Mark 1 upward, each step is roughly 10–15 °C or 25 °F. Gas Mark ½ is about 120 °C (250 °F) and Gas Mark ¼ about 110 °C (225 °F), used for meringues and drying.

Modern UK recipes typically print three settings side by side: conventional Celsius, fan Celsius and gas mark — “200 °C / 180 °C fan / Gas Mark 6”. The chart above follows that convention, so you can read across one row whichever oven you have.

Converting gas mark to an electric oven

To cook a gas-mark recipe in an electric oven, find the gas mark in the table and use the conventional Celsius column for a standard electric oven, or the fan column if your oven has a fan. For example, Gas Mark 4 becomes 180 °C conventional or 160 °C fan. Gas ovens tend to be hotter at the top than the bottom, so if your recipe mentions a shelf position, a fan oven will usually give more even results than the original.

Frequently asked questions

What is 350 °F in a fan oven?

350 °F is about 180 °C in a conventional oven, so a fan oven should be set to about 160 °C.

How much lower should a fan oven be?

This converter uses an approximate 20 °C reduction (36 °F) as a starting point. Follow the recipe and your oven manual; a 25 °F reduction is a different rule of thumb.

What gas mark is 180 °C?

180 °C is commonly paired with Gas Mark 4, about 350 °F. The exact conversion of 180 °C is 356 °F.

How do I convert an oven recipe to an air fryer?

Lower the temperature by about 20 °C (36 °F) and cut the time by roughly 20%, then check the food a few minutes early.

Is 200 °C the same as 400 °F?

Almost. 200 °C is exactly 392 °F, and oven charts round it to 400 °F (Gas Mark 6).

What is 425 °F in Celsius for a fan oven?

425 °F converts to 218.33 °C (rounded to 2 decimals). Approximate dial settings are 220 °C conventional or 200 °C fan.

Why do oven charts not match the exact formula?

Oven charts round to the nearest 10 °C and 25 °F to match oven dials. The exact formula is shown on our Fahrenheit to Celsius converter.
